Evaluation of Phytochemical and Mineral Composition of Malaysia’s Purple-Flesh Sweet Potato

Sweet potato (Ipomoea batatas (L.) Lam) is one of Malaysia’s underutilized main crops. However, systematic characterization phytochemical and mineral contents the sweet tuber flour still required for further specific food product development. Therefore, this study aims to evaluate effects peeling conditions on nutritional composition Anggun 1 cultivar. The following properties were investigated in different (unpeeled, peeled, skin only), i.e., (total phenolic, total flavonoid, anthocyanin content) elements (calcium iron). results indicated a significant interaction between all examined (p<0.05), flavonoid content (2615.05 mg quercetin/100g 3362.96 quercetinrties (p < 0.05). unpeeled had highest value phenolic (3142.98 GAE/100g 4303.80 GAE/10/100g), (628.35 mg/100g 960.30 mg/100g) iron (5.45 only). Moreover, result higher calcium (701.87 potato. provides broad insight into potato’s composition, which can be used development processing.
